designed to familiarize participants to the nuance, nomenclature, and understanding of Flavor. Students will interact with Flavor through prerequisite learning, lectures, demonstrations, and tastings. Students will demonstrate their comprehension of concepts through written and practical examinations, and successful students will receive a Flavor Master Certificate issued by The Culinary Institute of America and Coffee Critics Association.


Express various flavor vocabulary

Describe flavors in different chemicals, spices, fruits, vegetable, nuts and other foods

Distinguish and describe flavors and ingredients in different sauces

Demonstrate the ability to develop the sense and description of flavor

Employ the professional attitude as expressed by your professor at the Culinary Institute

of America
